    Very Berry Green Smoothie

A few weeks ago I headed to our local costco to get some frozen fruit just for smoothies. I have not been brave enough to make a protein smoothie but I have been trying new things and so far it’s going really well. I’ve made two smoothies with the fruit I bought. One was an antioxidant blend and I have to say I do not have a Vitamix (though it’s on my wishlist) so the pomegranate seeds do not get pulverized even in my crazy awesome blender. I have this one from Target. So that was not a very good smoothie. Today I thought I’d try out the other mix…

    Delicious Chalupa Recipe

During our move last year we stopped off at Mike’s Aunt and Uncle’s. While there we had this delicious Chalupa recipe. I had never had anything like this and it has become one of my favorite meals! It’s so simple to make and it is better the second day which is good because we love to have leftovers. It’s great on the wallet. Anyway, on to the recipe. Everything is made in the crock pot. 1 pound (or 2 cups) of pinto beans 3 lbs of pork loin roast 2 garlic cloves minced 2 Tablespoons Chili Powder 1 Teaspoon Oregano 1 Tablespoon Cumin 1 Tablespoon Salt 1 Can of Chopped…

    Lemon Chicken

This is by far one of the easiest meals I make. It has a total of five ingredients. The recipe below is what I make for Mike and I so add to this if you are making for more than just 2 people. A small 9×9 glass dish (oven safe or you can use a metal pan as well) and if you are making for more than 2 people I would recommend a 13×9 in pan. 2-4 breasts of chicken Enough lemon juice to almost cover the chicken Pepper Margarine or Butter 5-6 red or russet potatoes, cut into long strips with skin on Place chicken breasts and potatoes in…

    My Spectacular Marinara

My spaghetti sauce recipe has disappeared! I will reacquire it but at this point I will have to replace that with another Recipe. It is still italian but marinara rather than meat sauce. Ingredients: 1/4 Cup of Extra Virgin Olive Oil 2 14.5 oz diced tomatoes (I usually double this recipe) 2 Tablespoons of Parsley 2 Slices of Onion Garlic (I use almost an entire clove, if not 8-9 larger pieces) 2 Bay Leaves Salt and Pepper Directions: Heat up your oil and brown the garlic. Do not overcook the garlic because it will get bitter. Before the garlic is finished add the onion and parsley Once the onion is…

    Super Awesome Salmon Recipe

I promised you all a super awesome salmon recipe. It is our favorite meal in this house. You will need/want a digital (and preferably instant read) meat thermometer. If you don’t have one they have them at Kroger or Meijer and probably Walmart. I got mine fairly cheap and I’ve seen them run anywhere from $10-30 dollars depending on how fancy they are. Ingredients: 1-1.5 lb(s) of salmon split into two steaks (for two people) 2-3 lemons Freshly ground black pepper Aluminum Tin Foil Directions: Preheat the oven to 400 Degrees Pull off two pieces of tin foil (decent sized, enough to place the salmon in pull up around and…

    Hearty Chicken and Noodles

This recipe is super easy to fix, absolutely delicious and it is a new favorite in our home. I have also converted this to a soup with a few extra¬†bouillon cubes and some water and it is just as good. I have also recently added celery to this recipe which I will include in the directions. It gives it an added flavor that we felt was missing. Russet potatoes in place of the noodles make a good substitute as well. To do this follow directions as instructed and the last hour or two put the potatoes in. Delicious! Okay on to the actual recipe. Ingredients: 4 Carrots, sliced 4-6 Stalks…
